Double Chocolate Banana Bread

Okay, so I think 2020 and 2021 were officially the years of banana bread. We were all locked down with the pandemic, and for some reason, bananas were ripening faster than we could keep up. With nothing else to do, it seemed like making and eating banana bread was the only activity that brought even a little bit of joy to our lives.


Now fast forward to 2022, we're thriving, and so is our recipe collection! So, I'm going to show you how to level up your basic banana bread, this way, if you ever have ripe bananas and feel like switching it up, you're covered. This loaf is so soft, chocolatey, and personally, I think chocolate and banana together are ELITE.


For this recipe, you'll just need your pantry staples. We start off with mashed bananas, oil (I like to use melted coconut oil), mixed with eggs, vanilla, and sour cream. Then into the wet ingredients, we add sugar, flour, baking soda, and high-quality dutch process cocoa powder. Now, I'm a lazy baker, trust me, but the type of cocoa powder you use does in fact make a difference in your final product. I always recommend using as high of a quality of cocoa powder as you can find, I prefer using the Rodelle brand that's typically found at Costco, and for a really good price as well (a win-win!). Once all the dry ingredients have been added in, you want to add that final touch of chocolate chips. I typically like to use whatever I have on hand, which is usually semi-sweet chocolate chips, but you can chop up a chocolate bar and add in chocolate chunks, use mini chocolate chips, or anything else you desire!


Oh, and the best part? This recipe is just as simple as my Quick & Easy Banana Bread recipe, so it can be made in one bowl! So let's get started!


Double Chocolate Banana Bread


Ingredients:
  • 1 cup all-purpose flour

  • 1/3 cup dutch-process cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup sugar

  • 2 very ripe large bananas, or 3 medium ripe bananas

  • 1/2 cup sour cream (or greek yogurt)

  • 2 eggs

  • 1 tsp vanilla

  • 1/2 cup oil (canola, vegetable, or coconut)

  • 1/2 cup chocolate chips

Directions:
  1. Line a loaf pan with parchment paper and set it aside. Preheat your oven to 350F convection.

  2. In a large bowl, mash your bananas with a fork until no chunks remain. Add in the sour cream, eggs, oil, and vanilla.

  3. Mix in the sugar, followed by the flour, cocoa, salt, and baking soda.

  4. Combine the ingredients until a batter forms, you should see no specs of flour. Add in your chocolate chips.

  5. Pour into the lined loaf pan and bake for approximately 1 hour or until a knife inserted into the center of the loaf comes out clean.

  6. Allow the loaf to cool for 20 minutes, and then slice and enjoy!
