These soft and chewy cookies are filled with two types of milk chocolate and a scrumptious marshmallow swirl.
These cookies are currently on repeat in my kitchen. Now, I'm normally not a marshmallow fan, but for this recipe I used the Marshmallow Fluff that you can purchase from the grocery. And let me tell you, its been a game changer. You can typically find this at any grocery store. Because this is a marshmallow creme and not actual marshmallows, I find it doesn't burn in the oven, or get too chewy. The texture remains perfect!
These cookies are perfectly chocolatey, filled with milk chocolate chips, milk chocolate chunks and ribbons of marshmallow fluff throughout.
You can find a video on how to make these cookies on my Instagram.
Milk Chocolate Marshmallow Cookies
What you'll need:
1 cup salted butter, melted
¾ cup dark brown sugar
¾ cup granulated sugar
1 egg, room temperature
1 teaspoon pure vanilla extract
2 1/4 cups all-purpose flour
1 tsp baking soda
1 tbsp corn starch
1 cup milk chocolate chips
1 cup milk chocolate chunks
1/2 cup Marshmallow Fluff*
Directions
In a heat proof bowl, melt the butter.
Once melted, add in your sugars and mix using a spatula or a mixer. Add in the egg and vanilla and mix until combined.
Add in the dry ingredients (flour, baking soda and cornstarch). Mix until just combined.
Mix in both types of chocolate.
Using a spoon, scoop the Marshmallow Fluff and carefully spread it on top of the cookie dough.
With a cookie scoop, carefully scoop the cookie dough making sure you are getting the dough along with the marshmallow fluff. Scoop this onto the lined parchment sheet. You should have a dough ball with a beautiful marshmallow swirl on top.
Continue to scoop the dough in the same way, adding more Marshmallow Fluff as needed.
Once all the dough has been scooped, freeze the dough for a minimum of 30 minutes.
Meanwhile, preheat the oven to 350°F on a convection setting if possible.
Bake the cookies for 10-12 minutes, or until golden on the edges, and slightly soft looking in the middle.
Allow to cool, and enjoy!
