These chewy oat bars are filled with a homemade fudge, and I can promise you they give Starbucks a run for their money!
This is the BEST Oat Fudge Bar recipe ever! Like EVER! I promise you. The oat cookie bar layer is chewy, sweet, and has a nutty flavour from the oats. The thick fudge layer is made from high quality chocolate, and perfectly balances with the oat cookie layer.
This is an easy recipe to make, and I promise, it's going to be a staple!
Let's get started.
Ingredients:
For the Oat Cookie base:
1 cup butter, melted
1 egg
1 tsp vanilla
3/4 cup light brown sugar (dark works too)
1/2 cup white sugar
2 cups all-purpose flour
1 cup rolled oats
1/2 tsp baking soda
1/2 tsp salt
For the Fudge layer:
1 can condensed milk
1 cup semi-sweet chocolate
Directions:
The cookie base:
Preheat your oven to 350F and line a 9x9 pan with parchment paper.
In a large bowl, combine melted butter and both sugars. Mix together, and add in the egg and vanilla.
Gently mix-in the flour, oats, baking soda, and salt.
Mix until everything is well combined. There should be no flour clumps.
Add HALF of your oat cookie dough into the prepared baking pan. You'll want to keep have for the base and half for the topping of the bar.
Press the dough into the pan, ensuring that you have an even layer of cookie dough in your pan. If you find that the dough layer is too thin or you don't have enough to create an even layer add a little bit more cookie dough into the baking pan as needed.
Set the baking pan aside.
The fudge filling:
In a sauce pan on medium heat, mix together the condensed milk and semi-sweet chocolate.
Keep stirring until the chocolate is melted and you have a smooth consistency. There should be no chunks of chocolate, and it should be glossy.
Remove from the heat. Pour the chocolate fudge filling on top of the cookie dough base you've created in your pan.
Using a spoon or spatula, evenly spread the fudge across the pan.
The oat cookie topping
With the remaining cookie dough, evenly distribute on top of the fudge filling. I like do this by pulling off chunks and plopping them on top of the fudge.
You do NOT want to spread this cookie layer, since the fudge is soft and the topping will just sink.
Bake in the oven for 30 mins or until the top is golden brown.
Allow the bars to cool FULLY at room temperature, and transfer to the fridge for at least two hours.
Remove from the pan, slice and ENJOY!
