Oreo mint chocolate brownies

Calling all brownie lovers, these mint chocolate brownies are mouth-wateringly delicious. A chewy brownie base, filled with an Oreo mint fudge and, topped with a chocolate layer. These brownies are a mint chocolate lovers dream!


These Oreo mint chocolate brownies not only look stunning, but taste amazing too. They're a fine balance of chocolate, mint and sugary perfection, and not to mention, they're a combination of two of the best sweets out there, Oreos, brownies and, fudge.

The base of these brownies is simple, its a basic chewy brownie recipe. The next year is a white chocolate mint fudge. Once that layer sets, its topped off with a chocolate ganache. Although it may sound complicated, I promise you, its simple.

 

Let's make the Oreo mint chocolate brownies!

What you'll need

For the brownie layer
  • ½ cup unsalted butter

  • 8 oz semi-sweet chocolate

  • 1 1/2 cups brown sugar

  • 3 large eggs

  • 1 teaspoon pure vanilla extract

  • 1/2 tsp salt

  • 1/2 cups + 2 tbsp all-purpose flour

  • 1/4 cup dutch-processed cocoa powder

For the Oreo mint fudge layer
  • 1 can (14oz) sweetened condensed milk

  • 3 cups white chocolate chips

  • 1 tsp peppermint extract

  • 1 drop green food colouring

  • 6-10 Oreos, crushed

For the ganache layer
  • 1/2 cup semi-sweet chocolate chips

  • 1/2 cup heavy whipping cream

  • 1-2 Oreos, crushed, for the topping

Directions

For the brownie layer
  1. Line a square baking pan (8x8) with parchment paper. Preheat your oven to 350 degrees.

  2. In a heat proof bowl, add together your butter and chocolate. Heat the mixture in 30 second intervals in the microwave until the chocolate and butter have melted. Mix the butter and chocolate until you have a smooth and creamy chocolate sauce.

  3. Into the chocolate mixture, add your brown sugar and stir.

  4. Next, add in your 3 eggs, one at a time. Follow by adding in the vanilla. If you like a crackly top on your brownies, make sure to whip this for about 2 minutes.

  5. Add your flour, cocoa powder and salt into the mixture. Mix gently until just combined.

  6. Transfer the brownie batter into your lined baking pan.

  7. Bake for approximately 25-30 minutes. To test doneness, make sure the top of the brownie cooked. A knife inserted into the middle of the brownie pan should come out crumbly.

  8. Let your brownies cool at room temperature for 10 minutes, and then pop them in the fridge for at least 30 minutes.

For the Oreo mint fudge layer
  1. Remove the cooled brownies from the fridge and set aside.

  2. In a heat proof bowl, add in the condensed milk and white chocolate. Microwave in 30 second increments until the white chocolate is melted. Every microwave is different, so you want to be careful that you do not burn the chocolate.

  3. Once the condensed milk and white chocolate are combined, add in the peppermint extract and green food colouring. Mix well.

  4. Mix in the crushed oreos.

  5. Pour the fudge mixture over the brownies. Use a spoon or spatula to even out the fudge layer.

  6. Cool for at least 40 minutes in the fridge, or until the fudge is set.

For the ganache layer
  1. In a heat proof bowl, add in the whipping cream. Microwave for 2 minutes, or until its hot.

  2. Add in the chocolate chips to the hot whipping cream. Let sit for 5 minutes.

  3. After 5 minutes, stir until combined and forms a smooth silky ganache.

  4. Let sit for another 5-10 minutes.

  5. Remove the brownie fudge from the fridge. Pour the chocolate ganache on top of the fudge layer. Use a spatula or spoon to spread evenly. Add any sprinkles, or crushed Oreos on top.

  6. Allow the brownies to cool for at least 3 hours in the fridge.

  7. Once cooled, use a sharp knife to cut square pieces. Enjoy!
