I promise you will not be disappointed by this quick and easy banana bread recipe! Its so versatile, you can add chocolate chips, walnuts, coconut-- the sky is the limit!
INGREDIENTS:
- 1 1/3 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 very ripe large bananas or 3 medium bananas
- 1/2 cup sour cream (or yogurt)
- 2 eggs
- 1/2 cup oil (i like using melted coconut oil)
- 1 tsp vanilla
- 1/2 cup mix-ins* (chocolate chips, walnuts etc.)
DIRECTIONS:
1. Line a loaf pan with parchment paper. Preheat your oven to 350F.
2. In a large bowl, add in your ripe bananas and mash them.
3. To the mashed bananas, add in the sour cream, eggs, oil and vanilla.
4. Add your white and brown sugar. Mix until incorporated.
5. Next, add in your flour, salt and baking soda. Mix until the batter comes together. You can add in any mix-in's at this point.
6. Pour the batter into your loaf pan, and bake for 45-60mins, or until a knife inserted into the center of the loaf comes out clean.
