I've created a copy of this childhood classic Little Debbie treat, the Cosmic Brownie.
I think the Cosmic Brownie is my ultimate-- like ultimate childhood snack. The chewy brownie layer, the sweet chocolate icing, and those tiny colorful chocolate sprinkles just scream nostalgia. These are a fun treat to whip up, and they're sure to put a smile on anyone's face. Dare I say, these are better than the box. Sorry Debbie!
Ingredients
For the brownie layer:
1 cup unsalted butter, melted
2 cups brown sugar
3 large eggs, room temperature
3/4 cup cocoa powder
1 cup all purpose flour
1/2 tsp salt
For the icing:
2 cups icing sugar
2 tbsp cocoa powder
4 tbsp clear corn syrup
2-4 tbsp hot water (enough to get a spreadable consistency)
Topping:
Sprinkles (I use Sweetapolita Bit Chips)
Directions
Preheat to 350°F and line a 9x9 baking tray with parchment.
In a large bowl, mix together the butter, sugars and eggs. Use a whisk to mix it very well.
Add in flour, cocoa powder, salt.
Pour batter into parchment lined baking sheet, and bake for 25 mins. Do NOT overbake. A knife or toothpick inserted into the centre should come out with a few crumbs.
For the icing: Mix together all the dry ingredients. Add in corn syrup. Add in hot water, 1 tbsp at a time until the mixture is smooth and spreadable. You may not require all the water, so add it 1 tbsp at a time.
Once the brownies are cooled, pour the icing over the brownies and spread all the way to the edges. Immedietly top with sprinkles. Allow the icing to set and dry to the touch.
Cut into squares and enjoy!
