I haven't met a single person that doesn't like the Starbuck's Lemon Loaf. Nope, not one! As soon as I had my first bite, I knew I had to find a way to make my own. Yes, I play a dangerous game. Trust me, you might want to make two batches of this recipe, it disappears QUICK!
INGREDIENTS
Dry Ingredients
1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup sugar
Wet Ingredients
3 eggs
1/2 cup oil
1 cup sour cream or yogurt
1 tsp lemon extract (linked below)
2 tbsp lemon zest
Glaze
1 1/2 cup (190g) icing sugar
4 tbsp lemon juice
DIRECTIONS
Line your loaf pan with parchment paper or grease it with cooking spray. Preheat oven to 350.
Zest 2 lemons, or enough to get 2 tbsp worth of zest
Combine wet ingredients- eggs, oil, lemon juice/extract and sour cream
In a separate bowl, add in flour, sugar, baking powder, salt and whisk together.
Add the wet ingredients into the dry, add in lemon zest as well. Make sure everything is incorporated but do not overmix.
Pour into your loaf pan and bake at 350 for 1 hour (cooking time depends on your oven).
While your loaf is baking, grab a bowl and mix together your icing sugar with lemon juice. Add enough lemon juice so that your glaze is smooth and thick (you don't want it to run off your loaf, but you also want to make sure it will spread). DO NOT ADD ALL THE LEMON JUICE AT ONCE! Add it 1 tbsp at a time until you have the right consistency.
Remove your loaf from the oven, you know it's done when you put a knife through the center and it comes out clean.
Once your loaf has cooled, spread on the glaze.

NOTES
Lemon extract works BEST in this recipe, if you can get your hands on some, I would recommend that. It also lasts forever.
You can use the bottled lemon juice for the glaze, but fresh is best.
Baking times will vary, mine usually takes 1 hour+ in the oven, but keep an eye on it. As long as the knife comes out clean!
Let this cake cool for 20-30 mins
