These chewy bars make the perfect sweet snack and take no time to make!
Ingredients
1/2 cup butter, melted
3/4 cup brown sugar
1 cup flour
1 egg
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoon vanilla
1/4 cup white chocolate, melted
Instructions
Preheat your oven to 350°F. Line a 8x8 baking pan with parchment paper and set it aside for later use.
In a mixing bowl, add your egg and sugar. Whip this up until it's light and frothy; it should take a couple of minutes.
Gently mix in your melted butter, baking powder, salt and vanilla.
Transfer your batter into your baking pan. Bake for 15–20 minutes. The cookie bars should look lightly golden on top.
While your cookie bar is cooling, put your white chocolate in a heatproof bowl and microwave until melted. You'll want to do this slowly to ensure that you don't burn your chocolate. Go by 30-second increments and stir often.
Transfer your melted chocolate into a ziploc bag. Cut a little hole in the corner of the ziploc and drizzle the chocolate on top of your cooled cookie bar. You can add any toppings, I usually like to add sprinkles.
Let the cookie bars completely cool. Cut into slices, serve and enjoy!
