This is my take on the classic Tim Horton's Walnut Crunch donut, but in a cookie form!
What you'll need
For the cookies:
1 cup salted butter, melted
1.5 cups dark brown sugar
1 egg
1 tsp vanilla
2 cups flour
¼ cup cocoa powder
1 tsp baking soda
1 cup walnuts, chopped
For the glaze:
1 cup icing sugar
2 tbsp water
Directions
Mix together your melted butter and brown sugar until well combined. Add in the egg and vanilla. Mix until well incorporated and then add the dry ingredients. Once the mixture comes together, mix in the walnuts.
Using a cookie scoop, scoop out the dough on a parchment lined baking sheet. Pop the scooped dough into the freezer and let chill for at least one hour.
When you’re ready, on a parchment lined baking sheet, place the cookie dough balls 3 inches apart. I usually fit about 6-8 cookies on a baking tray.
Bake the cookies at 350F for 13-15 minutes or until the edges are set.
While the cookies are baking, in a small bowl, combine the icing sugar and water, and stir to combine. You should have a thick frosting consistency. If the mixture is too runny, add more icing sugar. If its too thick, add a little bit more water.
Once the cookies are done, allow them to cool for 5 minutes.
Now we are going to glaze the cookies. Using a spoon, scoop a tablespoon of the glaze on top of the cookies, and spread to cover the entire top of the cookie. Do this with all of the cookies.
Allow the glaze to set for another 5-10 minutes.
