White Chocolate Cookie Bars

These white chocolate cookie bars are thick and chewy, filled with a rich chocolately flavour and topped with a white chocolate drizzle.

Now, I know what you're thinking, what makes these White chocolate cookie bars any different than brownies? Well, technically, not much. Brownies are typically made with melted chocolate, and are fudgey and dense. Cookie bars on the other hand, are more chewy (like a cookie), a little more buttery, and have slightly less of a chocolate flavour.


This cookie bar recipe is so easy, it comes together in one bowl with simple ingredients you probably already have on hand.



 

White chocolate cookie bars


Ingredients

  • 2 cups of all-purpose flour

  • 1/4 cup cocoa powder

  • 1 tbsp cornstarch

  • 1.5 cups cup light brown sugar

  • 1 cup salted butter, melted

  • 2 eggs

  • 1 tsp vanilla

  • 1 cup white chocolate chips or chunks (to mix in)

  • 1/4 cup white chocolate chips (for melting)

Directions:


  1. Line a 9x9 baking pan with parchment paper. Heat your oven to 350F.

  2. In a microwave safe bowl, melt your butter.

  3. Add in sugar and mix using a spatula or a stand mixer.

  4. Add in the eggs, one at a time. Mix in vanilla.

  5. Mix in flour, cocoa powder and cornstarch. Combine until the mixture is uniform and all the flour is incorporated.

  6. Add in the chocolate chips. Carefully empty the dough into the prepared baking pan. Bake for approximately 35 minutes, or until a toothpick inserted comes out with few crumbs. The top of the cookie bars should look firm and the mixture should not jiggle if you move the pan around.

  7. Remove from heat and allow to cool for 20 minutes.

  8. In a microwave safe bowl, add in the 1/4 cup of white chocolate. Melt in the microwave for 30 seconds. Remove and then mix with a spatula. If the white chocolate is not melted, microwave for another 30 seconds. If the chocolate is not smooth, add in a few drops of vegetable oil to thin it out.

  9. Empty the melted white chocolate into a ziploc bag or piping bag.

  10. Starting from the corner of the cookie bar, drizzle the white chocolate in a horizontal motion.

  11. Once the white chocolate is cooled and set, cut into squares and enjoy!

* Pro-tip: if you want your cookie bars to look insta-worthy, allow them cool in the fridge for an hour before cutting them. This ensure clean cuts.

*I like to store these in an air tight container at room temperature.
